7 Soups in 7 Days: Volume 2 #2

Tomato Bisque
Scald 4 cups of whole milk
3/4 cup dry bread crumbs
1 medium diced onion
6 cloves of garlic
2-3 bay leaves
Set aside.

Heat 3 cups of tomatoes with 2 teaspoons of sugar to a boil. Put tomatoes through a sieve. Reheat milk mixture with 4 tablespoons of butter and add your best salt and fresh cracked pepper. Add to tomato mixture. Heat through. Garnish with a dollop of sour cream. I like to bake puff pastry over the bowl.
